Lemon & Thyme Chicken

Lemon & Thyme Chicken

An overnight recipe, rich in citrus & herb aromas & oils. Great for mid-week meals or lazy weekend afternoon grilling.




The Marinade:

3 Slices (1cm thick) - Lemon

3 tsp - Thyme

4 Black Peppercorns ( 1/2 tsp - ground Black Pepper)

1 tbsp - Apple Cider Vinegar

1 tsp - Chilli Salt

1 tsp - Salt

100ml - Water   


1.5Kg - Chicken Thighs

2 tbsp - Cooking Oil




1. Blend the marinade ingredients together.


2. Mix the marinade & chicken in a large bowl, cover with cling film and refrigerate overnight. A minimum of 3 hours will do too.


3. Preheat the oven to 220°C and insert a large, oiled sheet pan or a wide shallow oven dish.


4. Drain the marinated chicken from the bowl and arrange on the heated sheet pan / oven dish.


5. Grill the chicken for 40-50 minutes, while occasionally basting the it with the remaining marinade.


6. Serve hot immediately.
